Understanding dough hydration for better bread

I’ve been experimenting with different hydration levels in my bread dough, and it’s fascinating how a small change can drastically affect the texture and rise. Recently, I tried a 70% hydration dough and found the crumb to be airier and more open, but handling it was a bit tricky.
