The magic of a good starter

I’ve been experimenting with different sourdough starters lately, and it’s incredible how a little change in the flour can alter the flavor profile significantly. Just last week, I used a heritage wheat from a local mill, and the difference was astonishing — anyone else had similar experiences with their starters?

I’ve noticed that switching to whole grain flours not only boosts the flavor but also gives a nice texture to the bread — have you tried incorporating a bit of rye flour into your starter? It can really change things up.
