My mousse cylinder staged a mutiny

I engineered a bergamot–black sesame entremet with a 3-inch chocolate tuile halo, and at 6:10 a.m. the halo slid off like a jaunty beret and face-planted into the praline base. Anyone else have a brilliant flavor-design mashup that revolted the moment gravity remembered its job?

I had a yuzu–black sesame dome pull the same “jaunty beret” move; brushing the halo’s inner rim with a thin swipe of tempered chocolate as glue and setting it onto mousse that’s had 10–15 minutes to shed condensation stopped the slide. Did you assemble straight from the blast freezer or after a short fridge rest?

Probably a 6:10 a.m. condensation slip — rather than the tempered-chocolate glue @mariah_baker53 mentioned, pipe a 2 mm ring of lightly whipped ganache around the mousse rim, chill 3–5 minutes, then seat the 3-inch tuile so it bites. Do you see micro-beads on the rim when you pull it from the fridge, or is it dry?

, that 6:10 a.m. “jaunty beret” slide is cruel — quick question: was your 3-inch tuile sprayed or brushed with cocoa butter? Building on @mariah_baker53 but going the friction route, I lightly scuff the tuile’s inner rim with a microplane, blot any sesame oil off the mousse rim, and pop a snug acetate collar around it in the fridge for about 10 minutes so it locks in place.
