I hear you on the steam! It really does make a difference, especially in those first 10 minutes. I’ve found using a cast iron skillet filled with water creates a nice steam effect too.
But steam really does work wonders! I used to just spritz my loaves, but the steam from a tray of boiling water has made my crusts so much better. One trick I picked up is to score the dough just before baking — it helps the steam escape and gives you that nice, crunchy exterior.

Using a preheated pizza stone can really kick up that crust! I’ve noticed a crispier bottom crust when I do that… Have you tried adjusting your baking times for steam as well?
