I’ve had good luck with an LEM Big Bite #8 grinder β€” easy to clean and it won’t smear if you chill the trim 15–20 minutes in the freezer. For saws, I’d skip the cheap tabletop band saws; a used Hobart 6614 is rock-solid, or a 25-inch hand meat saw covers small batches. Small caveat: keep the knife and plate as a matched set and swap when dull, or you’ll get β€˜meat paste’ instead of a clean grind.
