I once swapped out coconut flour in a recipe, thinking I’d nailed it, but ended up with something that resembled a tropical sponge! I’ve totally been there; i once tried using almond flour instead of regular flour and ended up with a dense brick instead of bread. But hey, that tropical sponge could be a hit with the right frosting.
